ONE BANANA BANANA BREAD

Hello and Welcome to OUR Krazy Kitchen. Let me introduce myself, I am Martha from A Sense of Humor is Essential and I am delighted to be a guest host today and share my love of all things food!
Like most folks, I often have to deal with overripe produce and don’t want it to go to waste. This was the dilemma handed to me when I had one banana, on its way to being black, just defying me to put it in the compost pile, because most Banana Bread recipes call for at least two bananas, and I, alas, only had one.
Well, I researched the internet and came across this delightful recipe only calling for one banana.

One Banana Banana Bread
1 Large Very Ripe Banana
1 Egg with enough milk to make One Cup liquid
1 Stick butter/margarine (softened) ( 1 stick = 1/2 cup )
1 teaspoon Vanilla
1-1/2 Cup Flour
1 Cup Sugar
1 teaspoon Baking Soda
1/2 cup to 1 cup chopped Nuts (optional)
  • Put all ingredients in a large bowl together, no need to sift or premix. Use mixer on slow to medium to mix until lumps are just gone, not too long or bread will be too firm. Use baking spray on bread pans and dust with flour if desired.
  • Fill pans 2/3 full.
  • Bake 55 minutes at 350 degree until golden brown using the toothpick test for doneness. This bread comes out quite moist and lots of yummy banana flavor all with only the one banana!
You can use this same recipe to make teacakes (bake time is about 15-18 minutes), cupcakes, small loaves, etc…  The baked bread can be frozen. Just pull it out, defrost it, unwrap and reheat in paper towel in the microwave until warm. Slice it and enjoy!

    Funny, when I got up this morning I noticed 3 bananas that will need to be either frozen or used in bread today. I was thinking how most recipes call for 2 bananas. Now I can make 3 loaves, one for home, one for mom and one to bring to work 🙂

    I remember searching for a banana bread recipe that calls for 2 bananas most call for 3 and tons of butter and eggs. It’s nice to have a variety for such occasions!
